Have you ever heard of a Raw Thai ice cream sandwich? During this special class students learn how to make unique recipes that are not found in any other school in Thailand.
Raw food preparation is performed without cooking, never heating the food to more than 40°C or 104°F. Students new to this concept will be introduced to the process of using a dehydrator, one of the primary pieces of equipment in Raw food preparation.
Taught in Bangkok and NYCStudents are introduced to the primary ingredients used for the course program including flax seed, sea salt, agave, tamarind, coconut, Thai basil, chia seeds, psyllium husk, cacao, goji berries, apple cider vinegar, as well as ingredients commonly also found in Thai recipes such as dill, cilantro, parsley, mint, cashews and almonds. Then students learn to make our following main sauce recipes:
Instruction on making salads beginning with a fruit salad and simple leafy salad, then moving on to more difficult recipes such as papaya salad, and lesser known recipes including banana flower salad requiring complex preparation. The recipe set includes the following:
A variety of cold soup recipes are taught not unlike south-east Asian versions of Gazpacho.
Recipes that make great appetizers and or sandwich dishes.
A selection of main dishes.
A selection of main dishes.
Finish the course with the creation of a unique raw vegan dessert using the magenta variety of dragon fruit.
