Class program and schedule

Overview

Afternoon Thai vegetarian and vegan express cooking classes

Our express classes are designed for students who want an introduction to Thai cooking but have limited schedules. Typically the express class is the program of choice for students leaving on an evening flight, with just enough time to have one last great experience before traveling onward. Our cooking school is a favorite of vegetarian and vegan travelers from all over the world.

Express classes normally last two hours and are offered at 3pm and 5pm. Depending on the time of year, it's possible for the express class to be completed in 90 minutes in special cases. Please contact us if you are interested in an express class and need to complete it in less than two hours. Consider our express classes if you have a limited schedule but want to learn beginning popular Thai dishes.

During this time students get acquainted with the instructor and fellow students.

Course Material Overview

Each student receives our special course notes to review, which is later read in more detail during the hands-on cooking phase.

3:10 PM - 3:30 PM
Cutting Vegetables and Ingredient Preparation

Students begin by preparing some of the ingredients that will be used in the dishes they will prepare. Students chop, dice and shred various produce including carrots, potatoes, broccoli, cauliflower, lemongrass, galangal and tofu.

Discussion of Thai Spices and Herbs

The class begins with an introductory discussion of Thai ingredients, some brought directly from our organic garden. Ingredients discussed include three of the most important in Thai cooking: lemongrass, kaffir lime leaf and galangal.

3:30 PM - 4:00 PM Tom Yam chili paste.
How to Make Chili Paste

A lesson on making chili paste is taught after a discussion on Thai ingredients. Many students experience using a mortar and pestle for the first time, which is a common tool in Thai cooking that liberates an array of scents and tastes from the fresh raw ingredients used in chili paste.

Working with Fresh Ingredients

The chili paste is made from scratch, using fresh ingredients picked up at a local market including dried chilis, carrots, onion, garlic, lemongrass and kaffir lime leaves.

Main Lesson - Cooking 3 main recipes + dessert

During the main lesson time you will learn to cook the following recipes:

  • Tom Yum Soup
  • Pad Thai
  • Masaman Curry
  • Sticky Rice and Mango Dessert
